I am familiar with the known issues with Entuorage and Exchange 2003. More specifically the issue of after performing a offline defrag when the stores are remounted the Entourage clients "DESTROY" disk I/O with the creation of .IFS files to convert from the .edb to the .stm.

Question is: I have recently moved the .STM database to a SAN connected Fiber Channel(RAID 10) the .EDB is on another disk. After we remounted the stores we are now experiencing the same performance hit (Disk I/O) after this move. Will this create the same issue as a offline defrag with entourage clients/exchange I/O ????

I received my answer from microsoft tech. Yes, when moving the .STM database it does not copy the database but create a new file ( which causes the entourage .ifs issue)
