Migrating One Profile Files to Another

I am changing Exchange hosting providers today. My dilemma is how do I copy my folders from the existing (soon to be old) profile to the new profile, since you can't have two profiles open at the same time?! All I want to do is drag my folders into the new account. I know I could move them all to a pst file, but I was hoping there is an easier way?
