When i start a new message, as i type a letter into the to column it lists all contacts begining with the same initial that i have sent emails to even though they are no longer in my contact list. How can i erase the former contacts?

Remove individual addresses from the autocompletion cache by highlighting the entry when presented in the suggested names list (use your arrow key to migrate to the entry) and then hitting your Delete key before you tab out of the field. To clear the entire cache, follow the instructions here:

You can rename the *.nk2 file which responsible for the "automatic completion" for contacts in outlook.

However this will remove the whole list and create from the scratch. Unfortunately it is not possible to delete particular contacts from the list.
