I have tested with a newer RU in out test environment and Exchange 2010 SP2 RU 5.2 seems to have solved this problem.

Some items are having this issue, the size is in the range of 1 to 4 MB. Text and pixtures are included, what they do is organize a meeting at some point in the future, all mails that are coming in and that are about that meeting are opened, the content is copied (select all - copy) and pasted...

We have a 10MB limit on mail, the items that are causing problems are 3 to 4 MB, size is ruled out as a cause.
