All you really need to do is copy the pst files - beginning with Outlook 2010, pst files are stored under My Documents to make this easier. Microsoft released a backup addin that backs up the pst files on exit.
As Diane suggest there are tons of backup utilities. I have used SyncBackPro (see http://www.2brightsparks.com/syncback/sbpro-features.html) for years and have been VERY pleased with it. I use it to perform numerous scheduled backups on a daily basis. They also have a free version (less bells and whistle) but I've never used it.
