Outlook incoming mail & color blindness

I have an user who sees blue text as a very light gray. This creates a problem for him when reading incoming emails, particularly when there are several replies contained within the message.

What options do I have to make it easier for him to read? I don't see any way in the Outlook client to change the font or font color of all incoming (html) emails, nor to make all incoming email appear as plain text. I can have him Ctrl-mousewheel to zoom, which helps a little, but I haven't been able to find any universal fix for his issue.

I've searched the Internet for various combinations of blue text, Outlook, and accessibility, but I haven't found any relevant results.

Do you have any suggestions?
 
Outlook 2002 SP1 and up do support reading all mail as plain text - see Read Outlook Messages using Plain Text for specifics - the option is in tools, trust center. With this enabled, all mail is plain text and he needs to click to convert any to HTML.

He could convert specific messages to plain text - edit message command, then change format. As long as he doesn't save the message, they will not be converted permanently.
 
Thanks Diane! I was able to get him up and running. It won't be as pretty, but at least he can function now. Thanks again!
