What Controls what is shown in the preview pane

editing a custom outlook form, the preview pane shows information about a old user. how can i modify what shows up and/or change what shows up

Are you editing a new blank form? It sounds like someone customized a form that contained data - that data 'sticks' with the form. Try opening the form as a new item, delete all the data from it then use Design this form.
