is there a way to set all properties to "show total number of items" as the default value instead of unread totals
 
Not the default, but you can use VBA to change the setting on all folders. However, new subfolders won't pick up setting from the parent folder - they need changed manually or you need to run the script on the new folders.

Use a macro to change the Outlook option to show either the number of unread messages or the total number of messages in a folder.
