How to set Default FONT for Email composing ?

Email type or host:    IMAP
This has been driving me nuts. When I Compose an email, the font is so tiny and hard to read. However when I SEND the email, the Font is expected (when I see it in SENT folder) based on my settings (File/Options/Mail/Stationary & Fonts/New Mail Option).

For the life of me I can't get my New Mail item to show a larger font. Office 2021 here.
