Hello,
Hi! I have a quick question that might not have a clear answer. At work, I manage three different Outlook emails, which I'll refer to as Outlook 1, Outlook 2, and Outlook 3. Outlook 1 is my primary email, and when I start a new email, it automatically uses that address. I'm wondering if there's a way to change this setting so that, for example, if I'm in the inbox of Outlook 2, the sender defaults to Outlook 2 without me having to change it each time.

If there’s no setting for this, that’s fine—I just thought I’d ask here. Do you think I should reach out to IT about it?
 
Outlook won't change the From address when you switch your inboxes. You have to select the sender every time to send an email. If it is inconvenient, it's best to check with your IT team if they can make any changes.
 
I'm using Outlook 2021 so a different version than you. But mine always sends new emails from whatever inbox I am in at the moment.
I found a setting related to this. Make sure it is unchecked.

Go to File > Options > Mail in Outlook. Scroll down to the send messages section and look for the option "Always use the default account when composing new messages." Just uncheck that box. This way Outlook will send emails from the inbox you're currently in instead of always using the default account.
