unable to change font sizes in some replies

Good morning America!!!
I'm noticing in replying to some emails, the font size & styles are grayed out. I notice the sender has written in basic text.
I've my settings to html and in most replies, my font is that which I have set it to. My question is ... is there a way in the Settings for me to adjust the fonts & styles so they'll be the same in all my replies.
Also, is there a way for me to get it so the fonts sizes and styles are not grayed out. Thank you! Thank you very much!!! In advance of course! :-}
