how to install or enable categories in OL 2013 for calendar and contacts

Hello, I have OL 2013 on win 8.1 and for the life of me can't figure out how or where to get categories options to show up in contacts. i use existing categories but when I add new contacts there is no selection option to place them in pre-labeled categories.. very frustrating.. so many things taken away and hidden..

where can i find tips/help with very clear and specific step by step instructions to these features? i have used OL since the late 90's and am not an engineer or programer. I'm a sales guy who just wants to get work done. please advise. I will pay someone to help walk me through the steps..

Thank you for the quick reply. I left a corporate exchange environment to a small business w/out exchange.. too expensive to implement office 365 with hosted exchange so OL is becoming less useful and am forced to drop it because of so many exceptions and tricks to make things work.. too complex for an average user like me that just needs contacts, calendar and email synched with windows and an android phone.
