What determines whether Outlook just inserts a name or an actual email address in the "TO" box ?
I have tried to find a difference in the way contacts are saved.....

Addresses in the exchange GAL should go in as names. For regular contacts, its the value in the email display name field. If the name is in the autocomplete list, outlook uses the format in autocomplete.
