Font size suddenly got much smaller in TO and SUBJECT

That is what I needed. You have a current version so should have always had the "
new look"
I'm referring to this -

If instead you meant in the message list -

that can be changed in view settings, either in conditional formatting or in Other settings - the fonts are at the top.

This is what you'd see in the view - the column font is only used in the "single line" view
