Outlook Contact Notes show previous history with strike through.

Hi, we are running outlook 2010 (64bit) on an exchange 2003 server. We just recently uninstalled and installed Outlook 2010 on a few of our users and we just started noticing, now when we look up some contacts, in the notes section it shows previous notes and the current information is displayed but has a strike through (line through it). What is this, and how do we disable it?
