From one day to the next my color categories changed from the skinny multiple to expanded and with names. I would like to change it back to like before. When I have more than two categories for an item I would like them to switch to the skinnier type without any words after. Or at least get rid of the words. I do not mind the words in the open document but I would like to keep the column the same size all the time and have them all show up.

This is in the message list? You need to reset the view. Right click on the row of field names and choose Custom...then Reset. (Reset might even be on the right click menu, it is on some versions.)

If you mean in an opened message, that is how it is in opened messages.
