I am using Outlook 2013 and the 3 default colors are making my "eyes bleed". I have seen this talked about a lot but no movement on solving it. I have changed fonts and borders but softer background color would be so nice. I loved the 2010 Black color scheme...
 
Unfortunately, the only solution at this time is to turn down the monitor brightness - they haven't (and probably won't) release any updated themes. I found about 20% was enough to make it better - my monitors are always way too bright anyway and I usually turn them down about 10% (and use flux to adjust the color as the day progresses).
