I'm using Outlook 2021 and in my calendar I have 2 issues I hope I can change. First one is sometimes when I have more than one appointment in a day on my calendar it shows +2 in the window for that day. Then in other dates where I have 2 appointments they look like one appointment, the 2 appointments runtogether and look like one long appointment. In Outlook 2010 there was a colored bar for each appointment in a day.

Is there a way to customize 2021 to do something like that?
 
The +2 will only go away if you can make the window taller - use the simplified ribbon and the window at full screen. The other option is a 2 or 3 week view so the cells are taller. but its not persistent, so you need to select it every time you look at the calendar.

I'm not sure what you mean by the appointments run together - this is what mine looks like.
