Dopey move - deleted profile

After getting hit with the invisible text bug today, I followed some stupid advice and deleted my profile ("Outlook"). Created a new one ("Default", because it wouldn't let me create "Outlook" - turns out that's a good thing). But I can run Outlook with "outlook.exe /profile outlook" because outlook.xml is still in the C:\Users\<guess>\AppData\Roaming\Microsoft\Outlook directory. How do I get "Outlook" back as a choice in my list of profiles in the mail applet in control panel?
 
The file in C:\Users\<guess>\AppData\Roaming\Microsoft\Outlook is just the navigation pane.

Is the outlook profile here - HKEY_CURRENT_USER\SOFTWARE\Microsoft\Office\16.0\Outlook\Profiles if not, the only way to get the profile back is to use system restore.
