Outlook 2007 and 2010 for multiple calendar users

I have issues with both 2007 and 2010 when managing multiple calendars. I am unable to open up an existing meeting and add changes and save it without Outlook wanting to update for everyone on the invitation list.

Example -- send out dial in for conference call; get acceptances; then want to add the chairperson code to just the initiator of the meeting.

I am unable to do that. Very frustrating. Especially since its no problem in 2003!

Any suggestions for the fix? I've removed add ins and still no difference.
 
Depending on the field, its not an addin doing it. The time and location field always forces an update so the attendees know the time or location was changed. If you don't want to send the update, set outlook offline and save it - send the update then delete it from the outbox. Set outlook back online.
