Anyone know the difference between Exchange activesync (EAS) and Exchange (as with Office 365)?

ActiveSync is the protocol (IMAP and POP3 are protocols too) used to connect to the mailbox - most often used by smartphones because its quick and lightweight. It does not support all features supported by Exchange mailboxes - you need Outlook and the standard Exchange Server connection.

Exchange (whether office 365 or a company's mail server) connection type is the full-featured access to the mailbox and all items in it.
