Forwarding emails issue with special characters replacing text body

Problems with forwarded emails in Outlook - odd characters in the whole of the body text​

hi
Whenever I forward an email in Outlook (MS 365 subscription) the email body text comes out as a few weird characters or japenese/chinese symbols.
The whole of the email is replaced by these few characters.
Sometimes it is not only forwarded emails but also replies to some emails.
I have spent an hour on MS live chat to no avail !
Could somebody help please?
